Indian sweets range from milk puddings and fried syrup-soaked dumplings to frozen kulfi and halwa. Many are built on one idea: reduce milk slowly until it is rich, then flavour it with cardamom, saffron, rose or nuts. Desserts are often served at festivals and celebrations, but plenty of puddings are simple enough for any day. This is a small hub, and we would rather say so than invent filler.
Rice kheer is the anchor recipe. It uses soaked basmati simmered in 1 litre of whole milk for about 50 minutes of gentle stirring, until the grains are soft and the milk has reduced by about a third. The sugar goes in once the rice is cooked, followed by cardamom and nuts. It serves 4. For a cool, sweet finish, see mango lassi on the drinks page.
Patience is the main one. Keep the heat low, stir often so the milk does not catch on the base. Using whole milk and basmati gives a creamy result because the rice releases starch as it cooks. Make kheer on a day when you are at home anyway, since it needs regular stirring. Cool it fast: leave it in a shallow container and refrigerate within 1 hour, because milk dishes should not sit out in warm weather. Serve it warm or cold, with chopped pistachios or almonds on top. Because the recipe uses a full litre of whole milk, a heavy-based pan helps, and a wide pan reduces the milk faster than a tall one. Soak the basmati beforehand as the recipe directs, taste for sweetness only at the end, and let the pudding rest for a few minutes off the heat so the flavours settle before you serve it.
