Both are rice dishes of great reach in India, and the difference is method. Pulao cooks the rice together with its flavouring, usually in stock or water with whole spices. Biryani layers par-cooked rice with a spiced meat or vegetable masala (raw-marinated in kacchi style, pre-cooked in pakki style) and steams them together under dum. Both rely on long-grain basmati and on whole spices for fragrance. This is currently a small hub, so we say plainly what it contains.
Mutton yakhni pulao is the main recipe, a home-style version leaning Awadhi and Kashmiri. It pressure-cooks mutton with fennel, whole spices, ginger and onion to make yakhni, strains it, then cooks soaked basmati in 550 ml of that stock with the meat and golden onions. It serves 4 in about 2 hours. Beyond it, the South Indian meal prep plan includes lemon rice with a tempering of mustard seeds and curry leaves, and rice kheer shows a different side of the grain, simmered in milk for dessert. Those two are filed under other course hubs, but they are the nearest rice dishes on the site. Basmati is the usual rice for pulao, and its long grains elongate as they cook.
Rinsing and soaking come first. Next is using a measured amount of flavoured liquid, since too much water gives sticky grains. Third is the rest: let the pot stand covered so steam finishes the grains. The fourth is food safety. Cooked rice can carry spores of Bacillus cereus that multiply if rice sits warm, so chill within 1 hour, keep it refrigerated and reheat until steaming hot, as the recipes explain. Cool it within 1 hour, refrigerate in a shallow airtight container, and eat within 1 to 2 days, or freeze it. Cooked rice left warm can grow harmful bacteria. Reheat until steaming hot all the way through.
