This quinoa chickpea salad is a Mediterranean-style grain salad built from pantry staples: quinoa for a light, fluffy base, chickpeas for substance, and a sharp lemon dressing with cumin. It suits a make-ahead lunch or a side dish, served cool or at room temperature.
Why this recipe works
- Rinsing the quinoa removes the bitter coating, so the grains taste clean and nutty.
- Cooling the quinoa fully keeps the herbs green and the cucumber crisp when everything is tossed together.
- Dressing the salad in the bowl first coats every grain and chickpea evenly, and the 10-minute stand lets the lemon and cumin soak in.
Method
Rinse the quinoa in a fine sieve under cold running water for about 1 minute, rubbing it with your hand, to wash off the bitter natural coating.
Put the quinoa and 300 ml of water in a small pan and bring to a boil over high heat. Reduce to low, cover and simmer for 12 to 15 minutes, until the water is absorbed and the grains have popped open to show small white spirals.

Take the pan off the heat and leave it covered for 5 minutes, then fluff with a fork. Spread the quinoa on a plate or tray and cool for 10 minutes, until no longer steaming.
Tip: Warm quinoa wilts the herbs and softens the cucumber, so make sure it is cool before it goes in the bowl.

While the quinoa cooks, dice the cucumber, quarter the tomatoes, chop the onion, parsley and mint, and drain and rinse the chickpeas well.
Whisk the lemon juice, olive oil, salt, cumin and pepper in a large bowl until the dressing is thick and cloudy.

Add the cooled quinoa, chickpeas, cucumber, tomatoes, onion, parsley and mint to the bowl and toss gently until everything is coated.
Leave the salad to stand for 10 minutes so the flavours blend, then taste and add a pinch of salt or squeeze of lemon if needed. Serve at room temperature or chilled.
Swaps & substitutions
- Chickpeas → Cooked white beans or lentils (240 g): Adds a similar amount of protein. Rinse canned beans well to lower the sodium.
- Fresh mint → Extra parsley or coriander (5 g): Coriander gives the salad a more Indian flavour.
- Extra virgin olive oil → Rapeseed or sunflower oil (42 g): A milder oil that keeps the focus on the lemon and herbs.
- Plain salad → Add 60 g crumbled feta: Adds a salty tang. Feta contains dairy, so the salad is then vegetarian but not vegan.
Storage & reheating
Store the salad in an airtight container in the fridge for up to 2 days; the vegetables soften and release water over time, so drain any liquid before serving. For best texture, keep the dressing and the cut tomatoes and cucumber separate and combine them within 1 hour of serving. Cool the cooked quinoa within 1 hour of cooking before it goes in the fridge. Do not freeze it.
Frequently asked questions
Do I have to rinse quinoa?
Yes, in most cases. Quinoa is coated in saponins, which taste bitter or soapy. Rinse it in a fine sieve for about 1 minute, even if the packet says pre-rinsed, and taste a grain if you are unsure.
What is the ratio of quinoa to water?
About 1 part quinoa to 1¾ parts water by volume, 120 g quinoa to 300 ml here. Simmer covered until the water has gone and the spiral germ has popped out.
Can I make this ahead?
Yes. Cook and cool the quinoa and mix the dressing up to a day ahead, store them separately in the fridge and combine within an hour of serving. The salad itself keeps for 2 days.
Is quinoa chickpea salad a complete meal?
One serving has about 9 g of protein and 7 g of fibre in roughly 310 kcal, which suits a light lunch or a side. For a larger main, add 60 g of feta or a boiled egg per person, or serve it with flatbread.
Which allergens does this contain?
It contains none of the major allergens. Chickpeas are a legume, and the feta swap adds dairy. Quinoa is gluten-free, but check the pack for cross-contact.
