12 minGluten-freeMasala Omelette (Indian Egg Omelette)
12 min · Easy
These five egg breakfasts cover quick Indian street-food classics and two global favourites. Masala omelette takes 12 minutes, egg bhurji 22, avocado egg toast 11 and anda paratha 42. Shakshuka takes about 45 and feeds two. Each recipe cooks the egg through to a set white, with notes for firm yolks where yolks stay soft.
An egg breakfast can be ready in ten minutes or turned into a long, shared brunch. The right choice depends on how much time you have, how many people are eating and whether you want something light or substantial.
These five recipes range from thin Indian street-style omelettes and scrambles to a whole-wheat egg paratha, a modern avocado toast and a North African tomato skillet. Each one cooks the egg properly, and each recipe says how to take the yolks further if you need them firm.

Eggs poached in a spiced tomato and pepper sauce, a North African dish that is good for sharing.
Avocado egg toast takes 11 minutes and masala omelette takes 12. Both are cooked for one person, each with one pan.
Use fresh, refrigerated eggs and cook them until the whites are fully set. Pregnant people, young children, older adults and anyone with a weakened immune system should have the yolks cooked firm too.
Avocado egg toast (about 510 kcal, 24 g protein) and anda paratha (about 430 kcal, 18 g protein, 10 g fibre) are the most substantial; anda paratha is the heartiest Indian option because the flatbread makes it a full meal. Shakshuka is about 400 kcal per serving.
Shakshuka is the best for it, because the sauce keeps for 3 days and you add the eggs fresh. The other four are best eaten straight from the pan, though you can make the paratha dough up to 2 days ahead.
None of the five is egg-free, since eggs are the point, but the masala omelette, egg bhurji and shakshuka have no gluten in the dish itself. Serve them without bread to keep them gluten-free.
